3 CUPS COOKED AND MASHED SWEET POTATOES
1 CUP SUGAR
2 EGGS BEATEN
1/2 CUP MELTED BUTTER
1 TEASPOON VANILLA
MIX POTATOES, SUGAR, MELTED BUTTER, EGGS AND VANILLA AND
SPREAD INTO GREASE CASSEROLE.
TOPPING:
1 CUP COCONUT
1/3 CUP FLOUR
1 CUP PACKED BROWN SUGAR
1/2 CUP MELTED BUTTER
COMBINE COCONUT, FLOUR, BROWN SUGAR, MELTED BUTTER. SPRINKLE
OVER TOP OF POTATO MIXTURE. TOP WITH PECANS.
BAKE AT 350 DEGREES FOR 45 MINUTES.
