OVERNIGHT COOKIES
 
2 EGG WHITES (ROOM TEMPERATURE)
1/2 CUP SUGAR
1 TEASPOON ALMOND EXTRACT
1/4 TEASPOON VANILLA EXTRACT
1 CUP CHOPPED PECANS
1 CUP SEMI-SWEET CHOCOLATE CHIPS
 
PREHEAT OVEN TO 350 DEGREE.
 
BEAT EGG WHITES UNTIL FOAMY.  GRADUALLY ADD SUGAR (1 TABLESPOON AT A TIME) BEATING
UNTIL STIFF PEAK FORMED. (DO NOT UNDER BEAT).  ADD ALMOND AND VANILLA, MIX WELL.
FOLD IN PECANS AND CHOCOLATE CHIPS.
 
DROP BY SPOONFULS ON TO FOIL-LINED COOKIE SHEET.   PLACE IN PREHEATED OVEN AND
IMMEDIATELY TURN OVEN OFF.  LEAVE IN OVEN 8-10 HOURS OR OVERNIGHT (DO NOT OPEN OVEN).
REMOVE AND STORE IN AIR TIGHT CONTAINER.
